It’s relatively easy to follow.

Simply blend your prepped ingredients and put it in your ice-cream maker and you’re done.
No milk, sugar or eggs are used!

First open a coconut and empty it’s juice into a container. Scrap the inside of the coconut for it’s fruit flesh with the back of your spoon.

Place the coconut fruit flesh into your blender (She’s using Blendtec)

dAd in the cashew nuts that has been soaked overnight. Remember to strain it dry.

Add in some coconut water, Agave Nectar into the blender.

Peppermint extract next.

And Matcha Powder (green tea extract) to give it the lovely green color you expect from a mint flavored ice-cream.

Blend it up.

Next she adds in the Vanilla Bean seeds.

Coconut oil next and she gives it a finder blend.

Stir in the cacao nibs and you’re ready to pour the mixture into your Ice Cream Maker.

Ingredients:
– 2 cups soaked raw cashews
– 2 cups coconut meat
– ¾ cup coconut water
– 3/4 cup agave
– 2 t mint extract
– 1/2 c coconut oil
– 1/2 teaspoon salt
– 2 T cacao nibs
– 1 t matcha powder or spirulina
