Peach Ice Cream Recipe presented by Breville and Chef Sean Brock

He shares that making ice-cream is easy. You just need to find the “freshest fruit you can find” and add it to a basic ice-cream base. In this case, it’s peaches!
The base is usually made up to 3 main ingredients: Cream, Sugar and Egg Yolks.
First warm up the cream.
Dice the peaches into cubes.
Combine the sugar and egg yolks by whisking it till the sugars are combined with the yolks and turn to a pale yellow color.
To temperate the egg mixture with the warm cream:
Slowly add in the warm cream to the egg mixture, ladle by ladle while whisking the mixture.
Once you can feel that the egg mixture is getting warm. You can add the egg mixture to the rest of the warm cream on the saucepan.
Next, mix in the peach cubes.
Finally you can add in the peach ice-cream base into the Breville Ice Cream Maker to pre-chill the mixture.
Next select the “Ice Cream” mode on the dial and press start on “Auto” mode.
You will hear an alert from the machine, once your ice cream is ready.
Chef Sean presents the ice-cream by serving it over stewed peaches and overlaying it with a CornMeal Bread crumble.
